The Ready-to-Eat Revolution: Scaling Value-Added Seafood Entrepreneurship in Inland Maharashtra

Abstract:

The Indian fisheries sector is currently undergoing a structural shift from a traditional commodity-based market to a sophisticated, value-driven industry. While coastal regions have historically dominated the seafood landscape, inland Maharashtra-specifically Chhatrapati Sambhaji Nagar-is emerging as a strategic hub for seafood value addition. This research paper, titled "The Ready-to-Eat Revolution: Scaling Value-Added Seafood Entrepreneurship in Inland Maharashtra," investigates the entrepreneurial model of RITS AQUALIFE LLP and its retail division, RITS Seafood. Developed by Founder Ritesh Shalikram Pawar, the enterprise focuses on bridging the gap between raw fish production and modern consumer demand for convenience. The study analyses the "Ready-to-Eat" (RTE) and "Ready-to-Cook" (RTC) product segments, evaluating the technological interventions-such as precision filleting, standardized marination, and vacuum packaging-that enable a shelf-stable and hygienic seafood experience in an inland climate. The methodology employs a case study approach, documenting the production workflow from raw material sourcing to final retail presentation. Results indicate that value-added products like crispy fish fingers, premium cooked fillets, and ethnic seafood meals achieve a value multiplier of 3.5x to 5.0x over the base commodity price. Furthermore, the study identifies that the success of such enterprises depends on a dual-focus strategy: RITS AQUALIFE managing the technical aquaculture supply chain and RITS Seafood establishing brand trust through hygienic "Experience Centers." The findings conclude that scaling seafood entrepreneurship in inland regions is not only economically viable but essential for reducing post-harvest losses and improving the per-capita protein intake in urban populations. This research serves as a blueprint for sustainable "Blue Economy" startups, emphasizing that value addition is the primary catalyst for transforming local fisheries into a high-growth industrial sector.
